Spring is Springing: Raspberry Clover Club

Spring has sprung (kind of), so how about a beautiful, easy-to-make, refreshing cocktail to stun your guests (or just enjoy yourself!).

Now, raspberries are really a summer fruit in this country (and apparently the best come from Scotland!) BUT use them from frozen and they will be a super cheap and sustainable way of adding fruit not only to your cocktails but of course also to your diet.

Ingredients

  • 50ml Brighton Gin Pavilion Strength
  • 25ml fresh lemon juice (or lime will do, too)
  • 15ml sugar syrup (homemade! see below)
  • 2-3 raspberries
  • 1 egg white/ 20ml aquafaba (for a vegan version)

 

Make your own sugar syrup

Add sugar and hot/boiled water to a jar/bottle - 2:1 ratio (sugar:water). Stir to mix until the sugar has dissolved, let cool down/put in the fridge. Any sugar will do here (although we haven't tried icing sugar yet).
